Bubbles, like pearls, are always proper. Weddings, anniversaries, new jobs, break-ups, unexpected guests, beginnings, endings, everything, nothing and anything in between pair well with sparkling wine. Why? You ask. Why not? I say. Bubbles remind you that life is short and should be celebrated often. This particular bottle was originally served too cold by yours truly because my wine fridge at the moment is basically a reappropriated college dorm fridge. As the wine warmed up, the flavors emerged: first brioche, then green apple, with hints of vanilla and almond. The bubbles were lively and then creamy. The finish was delicious, lingering and urged you to take another sip. Made in the traditional method, this bottle of Thibaut-Janisson was fresh and zingy, pairing perfectly with a blustery Saturday night in March.

We’ve moved from #NCWineMonth to #VAWineMonth. October is Virginia Wine Month. We’re big fans of Virginia Wine, so we’ll be featuring a few wines this month from our neighbor to the north.

Tonight, it’s the Virginia Xtra Brut from Thibaut-Janisson Winery! 100% Chardonnay, this sparkling wine is a delight. Crisp golden apple and a yeasty undertone pair delighfully with roasted vegetables and grits!


We're very pleased with these beautiful grapes coming from Nelson County, VA. The flavor profile and the juice chemistry is what we want for our Virginia Fizz. Thank you Jennifer Rous

The traditionnal way to break" the cake" before pressing again, it's called " une retrousse" in French. Very good way to preserve the quality of the fruit but not so good for your low back😰

A state now ranking high on my list of great wine regions in the United States. This bubbly is crafted by Claude Thibaut and Manuel Janisson, both of whom bring generations of tradition from their homeland of Champagne, France. (I knew Champagne had to figure in somewhere with this gorgeous wine.) Crafted from all chardonnay grapes in the traditional method, it’s a sparkling that deserves accolades.

"Sparkling wine production is on the rise in Virginia, but this French-owned winery is the only one in the state specializing in traditional champagne method sparkling wine. The vast majority of Thibaut-Janisson is consumed in Virginia, but you can also find it in a few other states in the South and Mid-Atlantic. Both Claude Thibaut and Manuel Janisson are from grand cru villages in Champagne and source their grapes from the Monticello AVA. This Xtra Brut is made using the first pressing of the grapes, or tête de cuvée. It's drier and more complex than the Blanc de Chardonnay, with oaky, nutty flavors." We know it's only champagne if it's made in Champagne. But you just might mistake these méthode champenoise sparkling wines from North American wine regions for the real thing.
