Ok, time for another Oak Cliff yeast wrangling post! What we have here is a 400x view of a freshly collected sample of yeast from a new Pilsner that has just finished fermentation.
We're harvesting this yeast to reuse in a batch of Lager that we'll be brewing tomorrow. When we harvest yeast from one batch to pitch into another, we check it under a microscope for 2 things, 1) the cell count and 2) the viability.
The gridlines on the hemocytometer help us count the cells of a 100x diluted sample, and then we can extrapolate that to the number of cells in a milliliter of yeast slurry. It's great because we only have to count around 500 cells, instead of, in this case, the 2.8 Billion cells per milliliter that are really in this sample! That's a pretty dense chunk of yeast.
The other thing that is of importance is the viability of the yeast, or, how many of them are alive. We determine that by staining the sample of yeast with methylene blue. The healthy cells reject the stain and remain white, the dead cells have compromised membranes and turn blue. The exception to this is cells that have recently budded, in which case they'll turn blue, but they're as healthy as the white ones. In this sample, you can see that the majority of the blue cells are paired up, which means they've just budded and are healthy. The ones that are blue and all alone are dead, but there aren't many of those.
The end result is that we've got a slurry of yeast at 2.8B cell/ml and 97% viability. We're going to need to pitch 70 Trillion cells into the Lager tomorrow, but now that we have the cell count and viability, we know that's about 6 1/2 gallons of this yeast slurry. Easy peasy. Happy fermenting!

It’s finally opening day here at the taproom! As of today we’re returning to our regular hours, but you’ll notice a few changes. Seating has been spread to ensure 6’ separation for each party, additional seating has been provided on the covered patio, and standing areas at the bar have been limited. We’ve got hand sanitizer stations at the entries and near the bathrooms, and the usual soap and water in the bathrooms, so keep those hands clean! Our staff will be wearing masks, and patrons are encouraged (but not required) to do so while not at their tables. The games will remain put away for now, and families with kids are still welcomed, but the kiddos will absolutely need to remain at the table with their family. So, yeah, lots of other safety protocols we’ll be following not listed here, but most of all we’re excited to see all your smiling faces and to get some beer flowing again. Cheers!

Taproom Update: Our regular taproom hours will resume next Wednesday, the 27th! We thought hard about opening this Friday so we could celebrate the Memorial Day weekend with y’all, but our taproom is a bit disheveled from running curbside service the last several months and needs some good TLC before opening again. Also, we need to source hand sanitizing stations and finalize some other details before we welcome ya’ll back, so please bear with us one more week so we can do this right! Thanks so much for the love and support sent our way during curbside service... it’s been amazing! We’ll continue that through this weekend and for the foreseeable future, even after we’ve opened the taproom. Stay tuned for more opening details!

The latest beer in our Paleta Weisse series is brewed with fresh Mexican mangoes and ancho chiles for a sweet, tart, and spicy kick. Maria from @tromporrey will be serving hot and delicious tacos de trompo curbside, and we'll be slinging festive crowlers of beer!
This is a to-go only event, order online or just drive up and give us a beep. Tacos will be served fresh off the trompo, packaged hot and ready to go. Tacos are $2 for corn and $3 for gringas (flour w/ cheese). We'll have the Mango Chile Paleta Weisse and other beers available in 32oz crowlers for $8-$10 each.
For nearly 75 years, our founders and their families have called south Oak Cliff home. As kids they passed by the Astro Drive-in Movie Theatre and Polar Bear Ice Cream shop while riding their bikes to and from their Grandfather’s church. Eventually they left home for school. Years passed by and when they returned, their old stomping grounds were almost unrecognizable. Older community spots were shutting down, as new development projects reshaped the places they once knew.
A new interest in Oak Cliff, especially the Bishop Arts District, brought more and more people across the Trinity River. During this transformation, they watched as the Craft Beer Movement rippled through Dallas-Fort Worth.
As the revitalization of Oak Cliff and the beer-making revolution caught traction, the heart of Oak Cliff was lacking unique craft beer destinations to call home. The founders embraced the opportunity to change that–and there was no hesitation on what to name it: Oak Cliff Brewing Company.
