Cadillac Wines is lead by the visions of Corrie Watson and Will Churchill, Frank Kent’s great-grandchildren. The design of our facility is the result of ideas picked up from wineries/cellars in Las Vegas, Chicago, Napa, and South Africa. The wines we carry are also a result of those inspirations and the travels we continue to enjoy. We have built our wine selection with three distinct bands in mind. The bands are based on price and guide our stocking principles. The three bands are under $25, $26-$50, and over $50. Every wine in our inventory is one we would serve to our family and friends. This can be challenging in the lower band, but that’s where we have the most fun. You will find many wines you recognize and some you don’t. That’s where we come in to listen to your likes/dislikes and find wines that fit your palate. Anyone can sell wine, but few can correctly advise and guide you to new gems.

Have you heard about Wine Windows in Florence? They are only about one foot tall by 8 inches wide and families used to sell wine out of these windows from the cellars in their palace. Most have been closed up, but one is still open and a restaurant named Babae in the Santo Spirito neighborhood is actually using theirs now. What a great idea! Happy Winesday!

Our final Proseccos for this week are Zago and Glera Marca Trevigiana Bisson Vino Frizzante.
Zago is a bright straw yellow hue. It has fruity notes of apple, pear, citrus fruit and acacia flowers. Fresh, combines the aromatic primary flavors with persistent perlage.
Glera is a bright, fresh, dry, informal Italian sparkler. Pale-intensity lemon in color, this wine has a nose of lemon citrus peel, green apple and quince. Gran Duca is bursting with bright youthful fruitiness, this quality Prosecco has lasting flavors of apple, pear and citrus contained in a delightful bead of compact bubbles. Delicately fruity, slightly aromatic bouquet. Well balanced and light body. Harmonic at the taste.
La Marca Luminore sparkles with a pale, golden straw hue and lively bubbles, bursting in the glass. Delicate aromas of white flowers and stone-fruits complement the soft, creamy-texture. Today's featured Prosecco is Jeio & Jeio Superiore. Jeio has
a brilliant straw yellow color; perlage extremely fine and lively. Intense and fresh nose of citrus fruits and saline sensations. Fruit-forward, refreshing sip.
Jeio is a blend of Glera, Chardonnay, Pinot Bianco, and Pinot Grigio. Bright aromas of fresh green apple, with notes of citrus fruit, peach, apricot, and banana. White flowers and vegetal notes of freshly cut grass complement the spicy finish. Dry with a consistent body, this wine is elegant, fresh, and crispy, but not light.
Today's featured Prosecco is Col de Salici. This Prosecco has an attractive straw-yellow color with green-gold highlights. Col de Salicia has lightly fruity aromas with apple notes with hints of wisteria in bloom and acacia. Flavors of zesty green fruit palate with finely controlled acidity, harmonious finish. A little about Prosecco:
Prosecco DOC wines come in Spumante (sparkling), Frizzante (semi-sparkling) and Tranquillo (still) varieties. The wines are made from mainly the Glera grape, native to North East Italy for thousands of years, and can be combined with a maximum of 15% of the following grapes: Verdiso, Bianchetta Trevigiana, Perera, Glera lunga, Chardonnay, Pinot Bianco, Pinot Grigio and Pinot Nero. Prosecco Frizzante and Spumante varieties get their famous bubbles using the Secondary Fermentation production method, bottled under high pressure after fermentation in bulk tanks called autoclaves, as opposed to the traditional method, which bypasses the autoclaves and is used for other sparkling wine varieties. The end result is a brilliant straw yellow wine with fine, persistent perlage and aromas of white flowers, apple, and pear. It is fresh and elegant on the palate with moderate alcoholic strength.
